| CHILE TORTILLA ROLLS |

1 large tomato, blanched, peeled, seeded and chopped
1 C cheddar cheese, shredded*
1/2 medium pickled jalapeno pepper, drained, seeded, and chopped
1/4 C Pikled Garlik, (your choice flavor, chopped finely)
4 tortillas, medium-large*
Preheat oven to 350. Line a baking sheet with foil. In small bowl, combine all ingredients except for tortillas. Divide mixture evenly among tortillas. Roll tortillas to hold filling; hold closed with a toothpick. Place on prepared baking sheet; bake 1-15 minutes or until cheese is melted and rolls are steaming hot.
***These ingredients can have substitutions if you so desire, like reduced fat cheeses or fat free/organic tortillas. Use your judgement and just have fun with the recipe.
