SPINACH MEATBALLS
  10 oz. extra lean ground beef or ground turkey
1/2 C finely chopped spinach
1/2 C finely chopped onion
1 egg
3/4 oz. grated Parmesan cheese
5 cloves Pikled Garlik, your choice of flavor, chopped
Salt & Pepper to taste
1 T olive oil
3 T bread crumbs, seasoned

In medium bowl, combine meat spinach, 2 T of onion, the egg, cheese, garlik, salt & pepper. Form into meatballs (about 15). Refrigerate up to 30 minutes. Heat oil to very hot. Roll meatballs in bread crumbs then place them in pan and saute. Turn meatballs to thoroughly browned on all sides. Serve with your favorite sauce or pasta. These are great cold the next day for an easy lunch with a salad.
