| VEGETABLE PANCAKES |

1/2 C. all purpose flour
1/2 t. baking powder
1/2 t. salt
1/4 t. pepper
1 egg
1/4 C. milk
1 C. grated carrots
1 C. grated zucchini
6 cloves Red Chili Pikled Garlik
2 green onions (scallions), sliced
2 T. oil
In a mixing bowl, stir together the flour, baking powder, salt, and pepper. In another bowl, beat together the egg, milk, Pikled Garlik, carrots, zucchini, and onions. Add this to the dry ingredients and stir until combined.
Using a large skillet, heat 1 T. of oil over medium heat. Pour the batter by tablespoons into the pan, making a few pancakes at a time. Cook about 2 minutes on each side until golden brown. Add the remaining oil to the pan as needed. Serve pancakes at once. Makes 8 servings. For a spicier dish, add some sliced jalapenos to the batter according to your taste.
